Instructions

1. Put the couscous in a bowl and add the dry stock and spices

2. Pour over boiling water, stir and cover for 3-4 minutes

3. Toast pine nuts in a dry pan for a few minutes until lightly browned

4. Add the tomatoes, cucumber, herbs, chilli, lime and olive oil. Stir through gently

5. Fold in Top Herd Chilli & Lime Turkey strips, pomegranate seeds and the toasted pine nuts,
adding plenty on the top to make it look really tasty

ingredients list

- 200g couscous (+300ml boiling water)

- 1 red onion chopped

- 2tsp bouillon or 1 crumbled stock cube

- 1/2 red chilli chopped

- 1 tsp smoked paprika

- Juice of one lime

- 1 tsp cumin powder

- 1 tbs good quality olive oil

- 2 chopped tomatoes

- 170g Top Herd Chilli and Lime Turkey Jerky

- 1/2 chopped deseeded cucumber

- 100g pomegranate seeds

- a handful of chopped fresh mint & coriander

- 40g toasted pinenuts
